A Random Find in Ximending We found this place by accident while walking around Ximending — and it turned out to be so good. The broth was rich and comforting, the thin rice noodles were smooth, and everything tasted perfectly balanced. Having it hot on a cool day made it even better. There’s no seating — you just stand and eat in front of the shop. They have different cup sizes (I chose the small one and it was actually filling!), plus condiments available outside so you can adjust the flavor yourself. They even separate food waste and containers right in front of the shop — very organized and thoughtful. Very local, simple, and absolutely worth it.

A very popular rice noodle store in the tourist heavy Ximending walking street area, locals and foreign guests alike enjoy their simple yet utterly delicious noodles soup with innards. It's really more a stall where you can just stand and eat or sit on the street bench and enjoy this cup of noodle soup. They also have optional condiments to complement your taste, in three choices - - chili, garlic sauce and black vinegar. Personally it's already great as-is, but halfway through, I tried each of the three condiments per spoon and can definitely conclude that the garlic sauce changes the taste profile differently and I liked it, too! So I added about 4 scoop fulls to the remaining half of my large bowl and enjoyed the rest of my noodles.

This mee sua, or salted Chinese noodles made from wheat flour, tasted similar from my last visit here 11 years ago. The queue was still as long as back then, given that my visit here was a weekday mid afternoon. There were both locals and tourists and everyone was just standing around slurping and enjoying the hot soup. This, in my view, is the correct way to enjoy this bowl of mee sua. This, afterall, is Taipei so we do what the locals do. Also, it is far better to eat it here while the bowl is piping hot and not do a takeaway. The service staff is admirable. One of them took the order and payment, and he would say out loud your specific order, like big or small bowl, or eat here or takeaway. Without looking at your receipt, the serving staff would get your specific order correct. This given that the queue remained long and winding. We were observing and admiring the entire process, kudos to them. Lastly, you could help yourself to the chilli, garlic and vinegar made available freely. They do add that extra punch to this signature dish. Chef DJ has found the perfect combination for these 3 condiments: 2x chilli, 3x garlic, 3x vinegar. This enhances the overall taste and bring out the most flavorful mee sua. Try this combination and share with me your opinions.

Located in the heart of Ximending, this is a must go place to have their speciality, rice noodles. The shop is heavily featured in a number of vlogs and online posts. Not just a hype as they do not disappoint. They do not have any seatings and available only via takeaway. Ay Chung has clearly marked areas of where to queue and they are extremely efficient in their service. Even when the queues are long, they go through quickly. There is a counter to place your order and pay. Such a bonus the staff can speak in English. For folks who dont like corriander, patrons can inform the staff. Once the order has been placed and paid, patrons just progress to pick up the orders from another section. The rice noodles is truly wow. Has great depth of flavour in the broth with a rich bonito flavour. The noodles and the pork innards are also cooked to perfection. Served straight from the pot, it is piping hot and always worth waiting for a while for it to cool down. It is good from the first slurp to the last. I highly recommend this place and it isn't just an internet hype.

Stopped by this morning. Ay Chung Flour -Rice Noodles,Located in Ximending Picked up the noodles a perfect match of noodles and soup stock. Make sure you stop by early because the queue is almost always 50 people or more the afternoon. A definite stop every time im in the area.also realize ther is no seating.
