I visited for a special occasion, and it remains one of my most memorable Tokyo dining experiences. Chef’s ability to blend French technique with Japanese ingredients and culture elements is world-class. It was great to see their collaboration on the JAL Business Class menu recently—well deserved. Some Highlights: The Signature Turnip: Their "Fixed Point" turnip is a masterclass in technique. I’ve never had a vegetable maximized like this; it’s incredibly rich and savory. The Salad: The beautiful presentation of the fresh vegetable basket was definitely memorable. They showcase the raw ingredients before preparing a complex salad of 50+ seasonal items. The Ceremony: The meal concludes with a traditional Japanese tea ceremony, which adds a beautiful, meditative layer to the fine dining experience. Service & Departure: Service was always warm and attentive, as expected of a top-tier restaurant. We left with a generous gift bag, including a bottle of fancy artisanal soy sauce. A definitive three-star experience that I hope to revisit next time in Tokyo.
One of the best 3 Michelin meals in the world I’ve had in recent memory. We were a party of five, made a reservation in the private room next to kitchen for just a modest fee. Every ingredient on their menu is sourced from Japan only. The vegetable medley consisted of 64 different types of vegetable/root/fruits. The restaurant usually does not encourage guests to bring their own wines, but allowed us to open our bottles once we signaled intent to order wine from them as well.
The CP value of the cuisine experience is not high. The non-vegetarian part of the meal only has blowfish, group fish and duck and rest are mostly vegetarian dishes. The non-vegetarian dishes are mediocre in my opinion. Although the service is attentive. Overall I don’t think it has the strength of a 3 star Michelins restaurant compared to the 3 star restaurant I have visited before.
Highlight of our Japan trip. From start to finish, in terms of food, it was phenomenal. Every course was so tasty in its own ways. Loved all of them, but my personal favorite was the 63 ingredient salad course and the grouper course. Service was friendly and fun, but yet professional and formal. The som helped us picked a great bottle of orange wine. The tea ceremony at the end of the meal was also very poetic. Definitely will come back again!!
